Chicken And Bacon Salad

This is a salad that doesn't feel like a salad!




You start with a simple salad base of lettuce, tomato and cucumber..... 



but then pile juicy bacon, chunky chicken and plump avocado on top.



It's then all smothered in a balsamic dressing. 




 By this point the simple salad base is long forgotten! 



If you want to take it a step further, add a baked jacket potato drenched in melted butter to the plate.



At each stage the calories will surely be totting up, but so will the flavour factor. 


I have used... 

1 Jacket Potato, washed and pierced with a knife. Pop it in the microwave for 5 minutes on high to get it started then bake in the oven at 180C for approx 30 minutes. Smother with a knob of butter.
1 Chicken Breast, baked in the oven at 180C for 15-20 minutes (ensure it is cooked all the way through before serving).
1-2 Rashers of Bacon, grilled
1/2 an Avocado, skinned and chopped 
3-4 Tomatoes, washed and chopped
A handful of Baby Gem Lettuce, washed and roughly torn
A chunk of Cucumber, washed and chopped

2 tbsp Extra Virgin Olive Oil and
1 tbsp Balsamic Vinegar mixed together to make the dressing.

Coat liberally in the dressing and enjoy your uh... salad! It is still technically a salad!

  2. I love avocado with bacon so this is the perfect salad for me, plus a baked potato makes anything better!
